Cheesy Calabasitas
INGREDIENTS
2 tsp olive oil
2 tsp butter
1/4 of an onion, sliced
1 large zucchini, quartered and sliced
1 large yellow squash, quartered and sliced
1/4 cup OC Salsa Rica Salsa
1/4 tsp salt
1/8 tsp pepper
1/2 cup Cotija cheese (or your favorite melting cheese)
PREPARATION:
Heat the Skillet: Start by heating a large skillet over medium heat. Add 2 tsp of olive oil and 2 tsp of butter. Allow them to melt and sizzle together.
Sauté the Onions: Add the sliced onions to the skillet and cook for approximately 2 minutes, or until they become soft and translucent.
Add the Squash: Next, quarter and slice the zucchini and yellow squash. Add them to the skillet with the sautéed onions.
Season and Stir: Pour in 1/4 cup of salsa, 1/4 tsp of salt, and 1/8 tsp of pepper. Gently stir to combine all the ingredients, ensuring the flavors meld together.
Simmer and Cover: Reduce the heat to a simmer, cover the skillet, and let the mixture cook for 8 minutes. This allows the zucchini and squash to become tender while absorbing the savory salsa flavors.
Add the Cheese: Crumble 1/2 cup of Cotija cheese (or your preferred melting cheese) and sprinkle it over the simmering vegetables. Remove the skillet from the heat, cover it, and let the cheese melt for approximately 2 minutes. The result should be a creamy, cheesy, and delicious mixture.
